Traditional Roast Beef with Veg

1.5 kg Mick's Meat Barn Beef Roast
1kg baby white potatoes, halved or quartered
450g gold sweet potato, peeled, coarsely chopped
1/3 cup (80ml) extra virgin olive oil
200g green beans, trimmed


Step 1 - Preheat oven to 250°C. Line a large roasting pan with baking paper. Arrange beef, potato and sweet potato in lined pan. Drizzle with half the oil, turning vegetables to coat. Season.

Step 2 - Reduce oven to 200°C. Roast, turning the vegetables once, for 1 hour (or until the internal temperature of the beef is 60-65°C) for medium or until beef is cooked to your liking. Cover with foil. Rest for 10 mins.

Step 3 - Meanwhile, place beans in a heatproof bowl and cover with boiling water. Set aside for 2 mins or until just tender. Drain well.

Step 4 - Arrange beef with beans and vegetables on serving platter. Enjoy!
