1.6-1.8kg piece of Mick's Meat Barn Butterflied Lamb Roast
3 Garlic Cloves, minced
3 Rosemary Stems, finely chopped
3 tsp Dried Thyme
Salt & Pepper, to taste
Step One - In a small bowl whisk together the minced garlic cloves, rosemary, thyme, salt, pepper and olive oil. Marinade the lamb and refrigerate for 1-2 hours.
Step Two - Preheat the oven to 190c. Place the butterflied lamb roast into a large roasting tray and bring to room temperature.
Step Three - Cover with foil and roast for 45-50 minutes. Remove foil and roast for another 10-15 or until golden.
Step Four - Remove from the oven, cover with foil and set aside to rest, covered for 10-15 minutes.
Step Five - Slice and serve alongside roasted potatoes, pumpkin and fresh greens.
