Ingredients
4 Mick's Meat pork medallions
Olive oil
Salt and pepper, to taste
600g potatoes, peeled and cut into bite-sized pieces
250g green beans, trimmed
2 cloves of garlic, minced
1 lemon, zest and juice
Fresh rosemary or thyme sprigs, for garnish
Preparation
Step 1 - Place the potato pieces in a pot of salted water and bring to a boil. Cook for about 8-10 minutes until they're partially cooked but still firm. Drain the potatoes and set aside.
Step 2 - Season the pork medallions with salt and pepper. Heat a pan with a bit of olive oil over medium-high heat. Sear the pork medallions for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from the pan and set aside.
Step 3 - In the same pan, add a bit more oil if needed and sauté the minced garlic until fragrant. Add the green beans and sauté for about 3-4 minutes until they are tender yet still crisp. Season with salt and pepper. Remove from the pan and set aside.
Step 4 - Place the partially cooked potato pieces in a baking dish. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast in a pre-heated oven for about 20-25 minutes or until the potatoes are crispy and golden brown.
Step 5 - In a bowl, toss the sautéed green beans with lemon zest and juice. Serve the pork medallions alongside the roasted potatoes and lemony green beans. Garnish with fresh rosemary or thyme sprigs.. Enjoy!
