Sausage with Bacon Pasta

6 Pre-War ™ Sausages

½ Cup Olive Oil (plus extra to drizzle later)

150g Rindless Diced Bacon

2 Garlic Cloves, Finely Chopped

½ Cup Pine Nuts, Toasted

45g grated Parmesan cheese

½ Cup chopped flat leaf parsley

¾ Cup fresh breadcrumbs, toasted

500g Cooked pasta


Cook the sausages on a pre-heated medium BBQ, turning frequently until cooked through. After they are cooked slice them through in thick chunky pieces.

Heat the oil in a large frying pan and cook the bacon over a medium heat for 4-5 minutes or until crisp. Add the garlic and cook for 1 minute or until its turning golden. Add the sliced sausages and toss well.

Add the cooked pasta to the pan, along with the pine nuts, Parmesan, parsley and ½ cup of the breadcrumbs and stir through.

Use the remaining breadcrumbs to sprinkle on top of the meal when served and drizzle some olive oil over it all.
