4 Mick's Meat Barn Lamb Loin Chops
1 cup couscous
1 red capsicum, diced
1 shallot, finely chopped
1 mango, flesh diced
1/4 cup currants
1/4 cup slivered almonds
1/3 cup chopped fresh mint
2/3 cup natural Greek yoghurt
1 tbsp Moroccan stir-in seasoning
1 tsp olive oil


Step 1 - Place the couscous in a large heatproof bowl. Stir in 1 cup boiling water. Cover and set aside for 5 minutes to soak. Use a fork to separate the grains. Add the capsicum, shallot, mango, currants, almond and mint. Season with salt and pepper. Mix until well combined.

Step 2 - Combine the yoghurt and 1 teaspoon of the seasoning in a small bowl. Season with salt and pepper.

Step 3 - Spread the remaining paste over both sides of the chops. Heat the oil in a large non-stick frying pan over medium heat. Cook the chops for 3 minutes each side or until golden.

Step 4 - Divide the chops, couscous and yoghurt among serving plates. Enjoy!
