Maple, Mandarin and Mustard Pork Roast

Ingredients

1.5kg Mick's Meat Pork Roast

2 tbsp sea salt flakes

1/4 cup maple syrup

4 strips mandarin rind

1/3 cup mandarin juice

1 tbsp wholegrain mustard

8 garlic cloves, unpeeled

2 cinnamon sticks

10cm piece fresh ginger, sliced

1 cup chicken stock

2 bunches broccolini, trimmed, halved lengthways

3 mandarins, peeled, halved crossways

Crusty bread or mashed potato, to serve

Preparation

Step 1 - Preheat oven to 240C/220C fan-forced.

Step 2 - Pat pork dry with a paper towel. Rub salt all over pork. Place in a medium roasting pan. Roast for 30 minutes or until rind starts to crackle.

Step 3 - Meanwhile, combine maple syrup, mandarin rind and juice, mustard, garlic, cinnamon, ginger and stock in a large jug.

Step 4 - Reduce oven temperature to 200C/180C fan-forced. Add maple mixture to dish. Roast for 1 hour or until pork is almost cooked through. Add broccolini and mandarin to pan. Roast for 15 minutes or until pork is cooked through and broccolini is tender.

Serve this crispy maple, mandarin and mustard roast pork with crusty fresh bread or creamy mashed potato.
