Ingredients
1.5kg Mick's Meat Barn Rib fillet
4 cloves of garlic, minced
2 tablespoons fresh rosemary leaves, finely chopped
2 tablespoons fresh thyme leaves
2 tablespoons Dijon mustard
Salt and pepper to taste
(Sautéed Green Beans and Almonds)
250g fresh green beans, ends trimmed
2 tablespoons olive oil
2 cloves of garlic, minced
¼ cup sliced almonds, toasted
Salt and pepper to taste
Preparation
Step 1 - Preheat the oven to 180ºC. Place the beef rib fillet roast on a cutting board and pat it dry with paper towels.
Step 2 - In a small bowl, combine the minced garlic, rosemary, thyme, Dijon mustard, salt and pepper. Mix well to create a paste. Rub the garlic and herb paste all over the beef rib fillet, ensuring that it is evenly coated. Let it marinate for at least 30 minutes to allow the flavours to penetrate the meat.
Step 3 - Place the beef on a rack in a roasting dish. Add a little water to the roasting dish (about ½ cup). Roast for 60 minutes for rare, 75 minutes for medium and 90 minutes for well done.
Step 4 - Remove the beef roast, cover loosely with foil and let rest for 15 minutes to allow the juices to redistribute.
Step 5 - While the roast is resting, prepare the Sautéed Green Beans with Almonds. In a pot of boiling water, blanch the green beans for 2 minutes. Drain and set aside.
Step 6 - In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the blanched green beans to the skillet and cook for a few minutes until they are crisp-tender. Sprinkle the green beans with toasted almonds and season with salt and pepper.
Step 7 - Carve the beef rib fillet into slices and serve it with the sautéed green beans. Enjoy!
