Crumbed Tasmanian Lamb Cutlets, Sweet Potato Mash and Green Beans

Ingredients

12 Mick's Meat Barn GF crumbed lamb cutlets

Extra light olive oil, to shallow-fry

1kg golden sweet potato, peeled, cut into 3cm chunks

Steamed green beans, to serve

Preparation

Step 1 - Place the sweet potato in a steamer over a sauce-pan of boiling water. Cover and steam for 10 minutes or until tender. Drain the sweet potato and return it to the pan. Use a potato masher to mash the sweet potato until almost smooth. Taste and season with salt and pepper and beat with a wooden spoon until smooth.

Step 2 - Heat oil in a large frying pan over medium-high heat and cook cutlets for 2-3 minutes each side until golden. Remove from pan.

Step 3 - To serve, place the sweet potato on plate, top with the lamb cutlets and serve with steamed green beans
