Chicken Kievs with with broccolini and beans

4 Mick's Meat Barn Chicken Kievs

1 bunch broccolini

200g green beans, trimmed

1 cup (120g) frozen peas

1 tbsp lemon zest

2 tbsp olive oil


Step 1 - Preheat oven to 200C. Line a baking tray with baking paper. Place chicken on prepared tray. Bake for 30 mins or until golden brown and cooked through.

Step 2 - Meanwhile, combine the broccolini, beans and peas in a large heatproof bowl. Cover with boiling water and stand for 3 mins. Refresh under cold water. Drain.

Step 3 - Drizzle the broccolini mixture with oil and sprinkle with lemon zest and season. Divide the broccolini mixture among serving plates. Top with the chicken Kiev. Enjoy!
