Chicken Kievs with Roasted Vegetables

4 Mick's Meat Barn Chicken Kievs

4 cups of mixed vegetables (carrots, capsicum, zucchini, broccoli, and cauliflower), cut into bite-sized pieces

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme (or your favourite herbs)

Salt and pepper to taste


Step 1 - Preheat oven to 200C. Line a baking tray with baking paper. Place chicken on prepared tray. Bake for 30 mins or until golden brown and cooked through.

Step 2 - Meanwhile in a large bowl, combine the vegetables, olive oil, minced garlic, dried thyme, salt and pepper. Toss everything together to ensure the vegetables are evenly coated with the oil and seasonings.

Step 3 - Spread the seasoned vegetables out on a baking tray in a single layer and also place in the oven for about 20-25 minutes, or until the vegetables are tender and have started to caramelize and turn golden brown.

Step 4 - Serve the chicken alongside the roasted vegetables. Enjoy!
