Chicken Kievs with Creamy Mashed Potatoes and Buttered Green Beans

Ingredients

4 Mick's Meat Barn Chicken Kievs

900g potatoes, peeled and cut into chunks

450g green beans, trimmed

4 tablespoons butter

1/2 cup milk or cream

Salt and pepper, to taste


Preparation

Step 1 - Preheat oven to 200C. Line a baking tray with baking paper. Place chicken on prepared tray. Bake for 30 mins or until golden brown and cooked through.


Step 2 - Cook the potatoes until they are tender. Meanwhile, bring a pot of salted water to a boil. Add the green beans and cook for about 4-5 minutes, or until they are crisp-tender. Drain the cooked green beans and immediately transfer them to a bowl of ice water to stop the cooking process. This helps to retain their vibrant color.


Step 3 - Once the potatoes are cooked, drain them and return them to the pot. Add the butter to the pot and mash the potatoes using a potato masher or a fork until they reach your desired consistency. Pour in the milk or cream, starting with a smaller amount, and mix well. Add more milk or cream as needed to achieve the desired creaminess.Season the mashed potatoes with salt and pepper to taste. Mix well.


Step 4 - In a skillet, melt the butter over medium heat, add the beans and sauté for about 2-3 minutes, tossing them in the butter until they are coated and heated through. Season the green beans with salt and pepper to taste.


Step 5 - Serve the chicken with the creamy mashed potatoes, and arrange the buttered green beans on top. Enjoy!
