Chicken Kebabs and Spicy Thai fried rice

Ingredients

2 tablespoons vegetable oil, divided

1 egg, lightly beaten

1 small onion, chopped

1 clove garlic, minced

1 tablespoon brown sugar

1/2 teaspoon salt

3 cups cold cooked Jasmine Rice

1/2 cup diced vegetables, (frozen 3 vege is great for this)

200g cooked peeled and deveined small prawns

2 tablespoons Sweet Chilli Sauce

1 tablespoon Fish Sauce

Preparation

Heat 1 tablespoon of the oil in large fry pan or wok on medium-high heat. Add egg; stir fry until scrambled. Remove egg from skillet.


Heat the remaining tablespoon of oil in the fry pan on medium-high heat. Add onion, garlic, sugar and salt; stir fry 5 minutes or until onion is lightly browned.


Stir in rice, vegetables, prawns, chilli sauce and fish sauce; stir fry 3 minutes or until rice is heated through. Stir egg into rice mixture.


Serve with Cooked Chicken Kebabs on top.
