4 x 250g Mick's Meat Black Angus Rib Fillet Steaks
500 grams mixed vegetables (capsicum, zucchini, mushrooms, and onions), chopped into bite-sized pieces
1/2 cup (125ml) extra virgin olive oil
2 garlic cloves, finely chopped
2 teaspoon dried thyme
Salt and black pepper, to taste

Preparation
Method:
Step 1 - Preheat the oven to 200°C and remove the steaks from the refrigerator and allow them to come to room temperature for about 30 minutes.
Step 2 - In a large mixing bowl, toss the chopped vegetables with olive oil, salt, black pepper, and dried thyme.
Step 3 - Spread the vegetables evenly on a tray lined with baking paper and roast for about 20-25 minutes until tender and lightly browned.
Step 4 - Rub the steaks with minced garlic and olive oil on both sides and season with salt and pepper, making sure to coat both sides evenly. Cook in a large frying pan, over a medium to high heat and sear each side for 3-4 minutes or until liking.
Step 5 - Once the steaks are cooked, let them rest for about 5 minutes and serve with roasted vegetabes. Enjoy!
