Beef Stroganoff

4 Servings


1kg Rib Fillet Steak, thinly sliced
1/3 cup Plain Flour
1/2 tsp Sea Salt
Cracked Black Pepper, to taste
2 tsp Smoked Paprika
Olive Oil
300g Button Mushrooms, thinly sliced
2 Spring Oions/Shallots, sliced thinly
3 Garlic Cloves, finely choped
1/4 cup Tomato Paste
1/2 cup Beef Stock
2 tbsp Worcestershire Sauce
2/3 cup Sour Cream


Step One - In a large bowl combine the flour, sea salt, pepper and paprika. Thoroughly toss the beef strips through the mixture.
Step Two -  In a large frying pan heat a splash of olive oil over high heat until just smoking. Cook the beef in batches, adding more oil when necessary.
Step Three - Reduce the heat to medium high. Place more olive oil in the pan. Saute the mushrooms, onions and garlic until softened.
Step Four - Add tomato paste. Stir through for a further minute. Add the stock, Worcestershire sauce and sour cream to the pan.
Step Five - Return the beef and stir for a couple of minutes or until well combined and warmed through.
Step Six -  Serve with pasta or rice.
