Beef and avocado burgers

1 large avocado, halved, stone removed, peeled

1 lime, juiced

Salt & freshly ground pepper

500g lean mince for the burgers

1 Egg

Small handful of breadcrumbs

4 of your favourite rolls, halved


Roughly mash the avocado in a small bowl. Stir in the lime juice. Season with salt and pepper.

In a bowl, mix the mince, egg and breadcrumbs and then remove the mixture and for 4 patties with it

Heat a large non-stick pan over a medium-high heat. Add the patties and cook, for 4 minutes each side or until golden and cooked through.

Toast the cut side of the bread rolls. Spread the base with the mashed avocado. Top with a burger. Serve with chips, if desired.
