2 Rib Fillets, trimmed
1/2 Small Sprig Rosemary, finely chopped
2 Large Garlic Cloves, finely chopped
Salt & Pepper
1 cup Grapes, halved
75g Rocket & Baby Spinach Mixed Salad
Half punnet Cherry Tomatoes, sliced in half
3 Radishes, finely sliced
1/2 Lebanese Cucumber, finely sliced
1/2 Red Capsicum, finely sliced
1/2 Red Onion, finely sliced
1/2 tsp Lemon Zest, finely grated
2 tbsp Lemon Juice, freshly squeezed
1 tsp Raw Sugar
1/2 tsp Dijon Mustard
Sea Salt & Black Pepper, to taste
3-4 tbsp Olive Oil
Step One: Combine the finely chopped rosemary, olive oil, garlic, salt, pepper and beef fillets in a bowl. Ensure the fillets are well coated before placing them in the refridgerator to marinade for an hour.
Step Two: In a large bowl, toss together the prepared salad ingredients. Refrigerate, covered.
Step Three: In a small bowl whisk together the dressing ingredients. Refrigerate, covered.
Step Four: Over a medium to high heat on the BBQ grill the premium beef rib fillets on both sides for 3-5 minutes, or until cooked till your liking. Rest, covered, for half the cooking time.
Serve the cooked premium rib fillet steaks, sliced, with the Zesty Salad. Dress.
