Ingredients
4 x 600g Mick's Meat Barn beef short ribs
Salt and pepper to taste
2 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons onion powder
1 teaspoon cayenne pepper (optional, for heat)
1 cup BBQ sauce (your favourite variety)
Coleslaw and crusty bread rolls to serve
Preparation
Step 1 - Preheat your BBQ to medium heat. This recipe works best on a BBQ with a lid. Season the ribs generously with salt and pepper. In a small bowl, combine the paprika, garlic powder, onion powder, and cayenne pepper (if using). Mix well to create a dry rub.
Step 2 - Rub the dry rub mixture all over the ribs, covering them evenly on both sides.
Step 3 - Place the ribs on the preheated BBQ, close the lid and cook them for about 1.5 to 2 hours, or until the meat is tender and starts to pull away from the bones. Flip the ribs occasionally during cooking.
Step 4 - During the last 15 minutes of cooking, brush the BBQ sauce onto the ribs, turning and basting them every few minutes to create a sticky glaze. Make sure to watch them closely to prevent burning.
Step 5 - Remove the ribs from the BBQ and let them rest for a few minutes. Cut the racks into individual ribs and serve them hot. Serve ribs with coleslaw and bread. Enjoy!
