Ingredients
2 cups of fresh basil leaves
2 Cloves of Garlic
½ Cup of Extra Virgin Olive Oil
¼ Cup of Pine Nuts
½ Cup grated Parmesan
Sea Salt and Cracked Pepper to taste
4-6 Rashers of Bacon
Preparation
Place Basil, garlic, olive oil, pine nuts and parmesan into a blender or food processor. Blend all ingredients to either a chunky or smooth texture as desired. Add salt and pepper to taste.
Remove bacon rind and dice finely. Fry off and set aside.
Boil 500gm of your favourite pasta, (spirals work well with this recipe) drain but don’t rinse. Return pasta to saucepan, stir through bacon and the pesto mix. Serve with a topping of grated or shaved parmesan.
