Lamb Loin Chops with Rosemary & Garlic plus Grilled Vegetables
8 Mick's Meat Barn Lamb Loin Chops
2 tbsp Orange Juice
2 tbsp Red Wine Vinegar
2 Garlic Cloves, minced
2 tsp Rosemary, finely chopped
2 Zucchinis, sliced diagonally
2 Capsicums, cut into thick strips
250g cherry tomatoes
60g mixed salad leaves, to serve
Salt & Pepper
Step One - Preheat the BBQ grill on medium-high. In a medium bowl whisk together the orange juice, vinegar, garlic, rosemary and two tablespoons of olive oil. Add the lamb chops and turn to coat. Set aside for 10 minutes to marinate.
Step Two - Meanwhile, prepare the vegetables and add a drizzle of olive oil in a bowl. Season with salt and pepper. Toss to combine. Cook, 4-5 minutes each side, or until tender. Transfer to a plate, cover and set aside.
Step Three - Cook lamb chops on grill for 3 minutes each side for medium or until cooked to your liking. Season. Serve with the grilled vegetables and salad leaves.
