Peppered Pork with Apple Coleslaw



4 x 75g pork loin steaks
olive oil (or sesame oil), for brushing
2 tsp cracked black pepper
pinch dried chilli flakes
1 tsp sea salt flakes
1 green apple, coarsely grated
1 cup shredded white cabbage (or wombok - chinese cabbage)
2 tbsp chopped chives
1/4 cup (75g) whole-egg mayonnaise
1 tsp honey (If available use an earthy flavour like leatherwood)

Method (Pork):

Step One: Marinade the pork with the olive oil (or sesame oil - for a tasty twist), chilli, salt and crushed black pepper. Rest whilst preparing the apple slaw.
Step Two: Grill or BBQ for 3 minutes each side (or to taste) before serving.

Method (Apple Slaw):

Step One: Combine the grated apple, chives and cabbage in a mixing bowl.
Step Two: Combine the whole-egg mayonnaise, honey and cracked pepper in a small bowl until smooth.
Step Three: Add the dressing to the salad, mix thoroughly and serve with the pork.
