Mexican Pork Loin Chops with Tomato Salsa

Ingredients (Seasoning):
1 tbsp Chilli Flakes
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/4 tsp Cayenne Pepper
1/4 tsp Dried Oregano
1/2 tsp Smoked Paprika
1.5 tsp Ground Cumin
Sea Salt & Pepper, to taste

(or 2.5 tbsp of taco seasoning)

4 Mick's Meat Barn Pork Loin Chops
Olive Oil
2 Roma Tomatoes, finely diced
1 Avocado, finely diced
1 Small Lebanese Cucumber, finely diced
Sea Salt & Pepper, to taste
1 tbsp Lime Juice
1/4 cup Coriander, roughly chopped

Step One - Marinade the pork loin chops in the mexican inspired seasoning and olive oil. Place covered in the refrigerator for 30 minutes.
Step Two - Prepare the salsa by combining the chopped tomatoes, avocado, cucumber, salt & pepper, plus lime juice and coriander in a small bowl.
Step Three - Cook the pork loin chops for 4-5 minutes each side, or until cooked through. Plate and serve alongside the tomato salsa.
