Spiced Lamb Loin Chops with a Mango & Mint Salsa

Ingredients (Lamb Chops):
1 1/2 tbsp Ground Cumin
1 1/2 tbsp Ground Coriander
1 1/2 tsp Ground Cinnamon
1 tsp Tumeric
1/2 tsp Ground Cardamom
1/8 tsp Ground cloves
1/4 cup Olive Oil
2 Cloves Garlic, finely chopped
12 Mick's Meat Barn Loin Chops
Salt & Pepper, to taste

Ingredients (Mango Salsa):
1 Ripe Mango, finely chopped
1 cup Fresh Mint Leaves
2 Spring Onions, finely chopped
1 tbsp Lime Juice
Chilli, to taste

Method (Mango Salsa):
Step One - In a medium size bowl combine all ingredients, cover and refrigerate whilst preparing the meat.

Method (Lamb Chops):
Step One - On a dinner plate - using a fork or spoon - blend the cumin, coriander, salt, pepper, tumeric, cinnamon, cardamom and cloves,
Step Two - In a small bowl, whisk together the olive oil and garlic.
Step Three - Brush the lamb loin chops on both sides with the garlic oil mixture before pressing the chops into the spice mixture to coat both sides.
Step Four - On a medium to high heat BBQ grill the lamb loin chops for 4 minutes each side for a medium rare or until liking. Transfer to the serving plates.
Step Five - Serve alongside the Mango & Mint Salsa, steamed asparagus and green salad.
