Mick's Meat Barn Silverside Baguettes
800g Mick's Meat Barn Premium Silverside
3 Bay Leaves
10 Black Peppercorns
1/3 cup Malt Vinegar
1/2 cup Brown Sugar
2 Brown Onions, peeled & quartered
Mick's Meat Barn Premium Silverside, cooked & finely sliced
4 Baguette Rolls
1 Brown Onion, sliced
200g mushrooms, sliced
4-6 Slices Swiss Cheese
2 tbsp Olive Oil
1 tsp Sugar
1 tbsp Thyme
Step One - Place the beef in a large, heavy-based deep saucepan. Add to the saucepan the bay leaves, peppercorns, cloves, vinegar, sugar, onions and enough water to cover. Place over high heat and bring to the boil.
Step Two - Reduce the heat to low, cover and allow to simmer for 1 hour 30 minutes or to when the beef is firm to the touch. Using a spoon occasionally skim the foam from the surface. Remove the meat from the pan and set aside covered.
Step One - In a frying pan caramelise the onions in a frypan with a splash of olive oil, sugar, thyme, salt and pepper. Remove from the pan and set aside.
Step Two - Add olive oil to the pan over a medium heat. Add the mushrooms and cook for 2-3 minutes, stirring often, allowing the mushrooms to soften. Season with salt and pepper to taste, before removing from pan.
Step Three - Cut the baguette rolls in half and lightly grill the insides. Remove from the grill and layer the aioli, silverside, swiss cheese, mushrooms, onions and rocket. Top and serve.
