Premium Rib Fillet with a Creamy Potato Bake
4 Mick's Meat Barn Premium Rib Fillet
3 Mick's Meat Barn Bcon Rashers, trimmed and thinly sliced
4-5 Large Potatoes, thinly sliced
2 Garlic Cloves, minced
2 tsp Dried Oregano
2 tsp Dried Basil
3 Shallots, thinly sliced
1 1/2 cups Thickened Cream
1/2 cup Chicken Stock
1 cup Cheddar grated
1/4 cup Parmasen
Salt & Pepper, to taste
Dried Chilli Flakes, to taste
Step One - Preheat the oven to 180c. Lightly oil a medium size baking/roasting tray. Whisk together the cream, chicken stock, salt, pepper, chilli, garlic, oregano, and basil.
Step Two - Layer the sliced potatoes, sliced bacon, cheese and sauce, top with a layer of cheese and bake for one and a half hours, or until the potato is soft and the cheese lightly browned.
Step Three - Season the steak with olive oil, black pepper and salt. Sear the steak over a medium heat or grill for 4-5 minutes each side for medium rare, or to taste.
Step Four - serve the creamy potato bake alongside thinly slice portions of your steak.
