Porterhouse Steaks with Orange & Asparagus Salad
2 Porterhouse Steaks
1 bunch Thin Asparagus Spears, trimmed
1 handful Rocket
1/2 Spanish Onion (small), thinly slicecd
1 Orange, peeled & cut into individual segments
1 tbsp Orange Juice
1 tsp Orange Zest, grated
1 tbsp Red Wine Vinegar
2 tsp Poppy Seeds
2 tbsp Olive Oil
100g Danish Feta, cubed
Salt & Pepper
Step One - Bring a saucepan of water to the boil. Blanch the asparagus for 1-2 minutes, or until just tender. Drain and rinse under cold water.
Step Two - In a medium bowl combine the asparagus, onion, orange segments, rocket and danish feta. Refrigerate.
Step Three - Prepare the Porterhouse Steaks by lightly oiling each side of the steak. Season to taste.
Step Four - On a medium heat BBQ grill cook your steak for 4 minutes each side (for medium rare), or to taste. Allow to rest.
Step Five - In a small bowl whisk together the orange juice, orange zest, red wine vinegar, poppy seeds and olive oil.
Step Six - Share the salad between the two plates. Drizzle the dressing over the top. Add the steaks and serve.
