Mick's New York Rib Fillet with Three Bean Salad
Ingredients (Rib Fillet):
4 Mick's Premium Rib Fillet
Sweet American Style Mustard
All Purpose Pepper Seasoning (Masterfoods)
Shallots, finely sliced
or buy pre-prepared Mick's New York Rib Fillet in store at Mick's Meat Barn.
Ingredients (Three Bean Salad):
125g Green Beans, halved
2 tbsp Olive Oil
2 tbsp White Wine Vinegar
1 tsp Smoked Paprika
1 Clove Garlic, crushed
Salt & Pepper, to taste
400g Cannellini Beans, drained & rinsed
400g Red Kidney Beans, drained & rinsed
6 Shallots, chopped
150g Baby Boccocini, torn into small pieces
2 large Vine-Ripened Tomatoes
4 tbsp Continental Parsley, roughly chopped
Method (Rib Fillet):
Step One - Preheat your oven to 180c. Lightly drizzle a baking tray with olive oil and place in the steaks.
Step Two - (Skip this step if you have purchased Mick's pre-prepared New York Rib Fillet steaks.) Spread a generous helping of Sweet American Stlye Mustard over each steak, sprinkle with the seasoning and top with a layer of shallots over each steak.
Step Three - Bake for approximately 30 minutes for a medium finish, or cook until your liking.
Method (Three Bean Salad):
Step One - Cook the green beans in a pan of boiling salted water for 3-5 minutes, then drain and place in a bowl filled with iced water for 5 minutes to end the cooking process.
Step Two - In a small bowl whisk together the olive oil, white wine vinegar, paprika, salt, pepper and garlic.
Step Three - Drain the green beans and tip into a large bowl. Add the canned beans into the bowl, along with the shallots and baby boccocini.
Step Four - Toss with the dressing.
Step Five - To serve, lay the tomato slices on each plate and spoon a helping of the dressed three bean salad on top. Scatter with the parsley.
