Mick's Rump Steak with Chickpea Salsa
3-4 Mick's Meat Barn Rump Steaks
1 tsp Ground Coriander
1 tsp Ground Cumin
1/4 tsp Chilli Flakes, or to taste
2 tsp Lemon Zest
1 can Chickpeas, rinsed & drained
3 Roma Tomatoes, finely diced
1 Small Red Onion, finely chopped
2 Shallots, finely chopped
1/4 cup Fresh Coriander, roughly chopped
1/8 cup Fresh Mint, roughly chopped
1 tsp Lemon Zest
1/4 cup Lemon Juice
1/3 cup Olive Oil
Sea Salt & Pepper
Step One - Prepare the marinade for the steaks by whisking together the coriander, cumin, chilli, lemon zest and olive oil in a small bowl. Brush over both sides of the steak and refrigerate for up to 2 hours.
Step Two - Prepare the salsa by tossing together the chickpeas, tomatoes, onion, shallots, coriander, mint, lemon zest, lemon juice and olive oil. Season with sea salt & pepper to taste. Refrigerate until serving.
Step Three - Grill the marinated steaks for 4-5 minutes each side, or to taste. Plate and serve alongside the salsa.
