Mick's Roast Beef

Quick Tip: Marinade the beef overnight to maximise the flavour!
 

Ingredients:

3/4 cup water
1/3 cup soy sauce
2 tablespoons sugar
1 teaspoon ground ginger
1 teaspoon dried crushed thyme
1 clove garlic, minced
1 boneless beef roast, about 1.5kg
 

Method:

Step One: To create the marinade, combine the water, soy sauce, ginger, sugar, thyme, and garlic in a large, sealable, food storage bag or bowl (large enough to hold the beef roast).
Step Two: Pierce the beef roast all over with fork; place in bag or bowl. Close bag and turn to coat the roast thoroughly. Seal/cover and refrigerate the roast at least 4 hours or overnight. Turn the roast in the marinade occasionally to ensure even flavour coverage.
Step Three: Remove the roast from bag/bowl; return marinade to refrigerator.
Step Four: Place the roast on a rack in shallow roasting pan and cook, uncovered, at 165° for about 2 hours, basting with marinade during the last 30 minutes. Cook your favourite roast vegetables alongside.
Step Five: Strain the  remaining marinade and add 2 tablespoons of water; bring to a boil in a saucepan and boil for 1 minute.
Step Six: Spoon marinade over the sliced roast and serve with your favourite roast vegies.
