Mexican Spiced Rubbed T-Bones with a Chimichurri Sauce

Ingredients (T-Bone Steaks):
1 1/2 tsp Smoked Paprika
1 1/2 tsp Ground Cumin
1 1/2 tsp Cayenne Pepper
1 1/2 tsp Ground Sea Salt
2 Mick's Meat Barn T-Bone Steaks
Olive Oil

Ingredients (Chimichurri Sauce):
1 cup Fresh Flat Leaf Parsley, finely chopped
3 Garlic Cloves, minced
2 tsp Dried Oregano
1/4 tsp Dried Chilli Flakes
2 tbsp Red Wine Vinegar
1/2 cup Olive Oil
Salt & Pepper, to taste

Step One - In a small bowl combine the paprika, cumin, cayenne pepper, and salt. Divide the mixture and rub into both of the steaks. Cover and refrigerate for 2-3 hours.
Step Two - Whisk together the finely chopped parsley, dried oregano, chilli flakes, garlic, olive oil and vinegar. Season with salt & pepper. Cover and refrigerate until serving.
Step Three - Remove the T-Bones from the refigerator and bring to room temperature. Oil your bbq grill and sear the steaks over a moderate high heat for 6 minutes each side, or to taste.
Step Four - Serve alongside with the chimichurri sauce and a green salad.
