Glazed Mustard Beef with Mushroom Sauce

1kg Mick's Meat Barn Beef Roast
2 tbsp Dijon Mustard
1/2 tsp Ground Black Pepper
3 cups Button Mushrooms, finely sliced
4 Shallots, finely sliced
1 Garlic Clove, minced
2 tbsp Butter
1/4 cup Plain Flour
1/2 tsp Thyme
1.5 cups Beef Stock
1/4 cup Cream

Method (Beef):
Step One - Rub the mustard and pepper mix onto the beef roast.
Step Two - Place the beef onto a rack within a shallow roasting pan.
Step Three - Roast at 200c degrees for an hour for medium, or to taste. Cover with foil and let stand 15 minutes.

Method (Sauce):
Step One - Cook the mushrooms, shallots and garlic in hot fry pan until tender.
Step Two - Stir in the flour and thyme.
Step Three - Gradually stir through the beef stock, until thickened.
Step Four - Stir in the cream, cook and stir until heated through.
Step Five - Thinly slice the roast beef across the grain. Serve with the sauce, green beans and baked potatoes.
