Balsamic Glazed Steak with Field Mushrooms
Ingredients (Balsamic Glaze):
1 cup Balsamic Vinegar
1/4 cup Brown Sugar
2 tbsp Olive Oil
2 Large Flat Field Mushrooms
2 Mick's Premium Grass Fed Rib Fillet Steaks
1 Clove Garlic, minced
1/4 cup Basil Leaves, roughly torn & loosely packed
2 Handfuls of Rocket Leaves
1/2 Shallot, finely sliced
8-10 Grape Tomatoes, quartered
Sea Salt & Pepper, to taste
2 tbsp Balsamic Glaze
Method (Balsamic Glaze):
Step One - Over a high heat, bring the vinegar and sugar to a rapid boil in a saucepan, stirring until the sugar has dissolved.
Step Two - Reduce the heat and allow to simmerfor 8-10 minutes, or until the sauce has reduced by half and become thickened and syrupy.
Step One - In an oiled pan over a medium-high heat cook the mushrooms for 2-3 minutes each side, or until tender. Set aside.
Step Two - Increase the heat to high. Season each side of the steak with the salt, pepper and minced garlic. Add to the pan and cook for 2-3 minutes each side, or to your liking.
Step Three - To plate, layer the steak, balsamic glaze and mushroom. Serve alongside the rocket, tomato, basil and shallot salad. Finish with a drizzle of the balsamic glaze.
